This calculator has been developed by Meat & Livestock Australia (MLA), based on the predictive model for Escherichia coli growth developed at the University of Tasmania (Ross et al., 2001). The application of the model to hot boning have been developed through the work of MLA’s hot boning expert panel. The Australian Quarantine inspection Service (AQIS) approves this calculator for determining the Refrigeration Index
